The economic importance of an annual w o r I d production of tea estimated to be in the region of 1-15 million tones has resulted in considerable attention being paid to the understanding of the chemical and physical changes w h I c h take place during tea manufacture.The three main types of tea, black, green and instant tea, are made by processing the y o n g shoot or flush, comprising the terminal b u d and t w o adjacent leaves of the tea plant (Camellia genesis), s h o w n opposite. Of these types of processed tea the most important is the familiar black tea, w h I c h is a fermented product, the coloring matter arising f r o m enzymes oxidation of phenol components of the tea leaf. Green tea, o n the other hand, resembles m o r e closely the dehydrated leaf, any chemical changes being non-enzymes and its brews do not contain highly colored pro ducts.Green tea is the m so t popular of r m of tea in a number of countries including China and Japan. Instant tea may be prepared f r o m both black and green tea, the process essentially involving extraction w I t h water, concentration and dehydration. The w o r I d market for instant tea, however, is small (some 5% of w o r I d tea production), indicating perhaps that satisfactory products have not yet reached the customer. The market has been further affected by the introduction of tea bags.In view of the commercial importance of black tea and the intricacy of the mechanisms of its manufacture, this product has received by far the most attention and the purpose of the present article is to outline some findings in this field. The black tea process 1 The freshly plucked tea flush is allowed to wither in air for some 18-20 hours, or for shorter periods when heated air is circulated, when it loses water and acquires a kid-glove feel. Important chemical changes have already begun to take place 2 .For example, amino acids are formed as precursors of compounds ultimately leading to the production of flavor and non-enzymes browning, the formation of kite compounds as flavor precursors and the 2 formation of caffeine. The leaf also becomes capable of acquiring a twist, rather than breaking up, when it is subsequently rolled. Fermentation is initiated by rolling when the enzyme, normally located in the chloroplast, and the phenol substrate, found in the cell vacuoles, are mixed in the presence of oxygen, without extensive damage to the outer cell wall.A three hour fermentation results in less than 10% of unchanged substrate remaining 3 . Fermentation is arrested by firing in a stream of hot air which also dries the product to some 3% moisture content. The final stage is grading. Enzymes oxidation Phenols or polysaccharides are enzymes which mediate in the oxidation of o-depletion to o-quinine's in the presence of oxygen but most of these enzymes are also capable of oxidation monopoles to o- quinine's. In fact, each group of compounds may be further distinguished according to the arrangements of groups around carbon atoms 2 and 3, resulting in four possible isomers.For example, the isomers of the catechisms are: (-) catechist, (+) catechist, (-) peachiness and (+) peachiness. In addition, these compounds exist as esters with Gaelic acid, figure 3. The most abundant are the collocations and specifically (-) epistemolo gically and its gallant ester (ca. 10% dry weight). In order of abundance, this is followed by (-) peachiness and its gallant (ca. 5 by weight) 4 . Carbon rings of this size are infrequently found in organic chemistry but the essentials of this reaction are illustrated by the oxidation of paroxysmal to form purloining, figure 4. Gaelic acid, found extensively in fermented tea, can undergo a similar reaction to form purpurogallincarboxylic acid.The thyroxin grouping of the collocations can react in a similar manner to paroxysmal and it is therefore, not surprising that compounds such as paleontologist, figure 5, are found to be present in black tea 6 . It is also found that the catechist can take the place of one molecule of reactant in the purloining reaction. Thus, catechist can react with Gaelic acid to form diphtheria acids, figure 6, but, more importantly, one molecule of catechist is capable of reacting with one molecule of collocating, again in a purloining type reaction 2 .T he product is known as deflating and the structure is shown in figure 7. Deflating and its gallant esters are very important orange-red coloring matters in black tea constituting some 2% by weight on a dry basis. However, by weight, the most important group of coloring matters in black tea is that known as therapeutics constituting more than 10% 7 . For more than a decade now, many Filipinos have trekked to EDSA to commemorate the anniversary of the February 1986 â€Å"People Power Revolution,† marking the overthrow of President Marcos’ regime. This year the customary rituals – ecumenical invocations, on-site masses, eloquent political speeches, martial marches, colorful parades, star-studded shows and other diversionary entertainment – will be performed as before. The celebration will probably take a more subdued tone as the country, as well as the region, reels from the economic slowdown and disruptive challenges to erstwhile secure political orders. For most people who persist in joining the EDSA celebration, few are inspired to explore its historical or spiritual connotations. It appears sufficient that this historic stretch of the national highway is momentarily transformed into a convenient amusement park. After all, people who live precariously from moment to moment, as more Filipinos now must, are not inclined to burden themselves contemplating the depressing state of the nation. In 1986, a critical mass of Filipinos found Marcos and the political order he created sufficiently revolting; and, throwing their support behind a small band of desperate military coup plotters, forced the ailing dictator, his family and his subalterns to flee the country. The popular revolt succeeded in toppling Marcos’ rule, but lacking a clearly revolutionary ideology, a revolutionary program of government, a revolutionary political leadership and indeed a revolutionary mass base, the rising could not go much beyond ridding the country of the hated Marcos and dismantling the formal political infrastructure of his dictatorship. The leaders and other supporters of the â€Å"people power revolution† could have worked hard to give substance to this media-projected identity. Indeed the momentum of the popular revolt could have been sustained and immediately magnified had a series of progressive government policies been launched and implemented with revolutionary rigor by the successor regime. These policies included people empowerment particularly at the local level, national unification embracing the traditionally marginalized and even the main rebel groups, recovery of plundered public resources and relentless pursuit of those responsible for the rape of an entire nation across several generations. The revolutionary possibilities indicated by these early policies of the new government however would remain illusory. Traditional vested interest groups (e.g. landed wealth, those in business and the religious) as well as politicized new players in Philippine politics (e.g. the military) developed more than enough political stakes in the post-Edsa political arrangements and predictably shirked from the revolutionary thrusts of these early policies. As had happened so often in the history of most nations, collaborationist Philippine elites thought it best to undertake a politics of restoration where their primacy would be guaranteed rather than to assist in the building of a new and, for the historically privileged, a problematic, even outrightly perilous democratic regime. A nation that is successfully misled by its leaders into adopting this convenient and self-serving ambiguity learns to readily forgive and hence to also easily forget. Without a clear memory, no nation can hope to sustain an irreversible revolution, the only truly reliable path to its deserved destiny. The historical record since 1986 reflects the implacable effects of reformist policies which do not basically alter the substantive character of Philippine society and its core political system. Economic and political inequities remain at high levels, with poverty engulfing probably more than 6 years percent of the nation’s families (this count is often registered in academic surveys although the government’s own estimates would improve this profile, cutting down the estimated poverty incidence rate to less than 40 percent by 1997). Despite the much touted improvements in national economic performance particularly between 1992 and 1997, Philippine per capita income remains low in relation to countries like Thailand and Malaysia and only slightly better than Indonesia within the region. Systemic graft and corruption remain at fairly high levels. Thirteen years after the EDSA Revolution, a new president’s public speeches would continue to denounce routinely â€Å"hoodlums in robes† (those in the judiciary), â€Å"hoodlums in uniform† (those in the military and the police) as well as all other plain hoodlums in and out of government service. All would be warned in his inaugural address not to test his presidential resolve to combat graft and corruption. (Almost a year into his own presidency, it appears that some of his own close political aides have been hard of hearing at his inauguration). One could continue documenting the agitating features of Philippine political history after 1986. One could explore the serious challenges of criminality to public safety (with about 40 percent at least of the people feeling unsafe whether in their own homes or in the streets of their own neighborhood), or of dissident groups defying public order (the CPP-NPA-NDF communist threat and the Muslim Islamic Liberation Front) or the politicization of purportedly neutral government institutions such as the judiciary and the military, among others. All these are painful images of a current reality emphatically belying any claim that a political or socioeconomic revolution was indeed precipitated at EDSA. Yet one more image remains and perhaps it is this one that might serve to sufficiently outrage another critical mass and another generation of Filipinos toward a much more authentic revolutionary awakening. Criminals do appear to have a compulsion to return to the scene of their crimes. The national plunderers are back in business, in all the influential sectors of Philippine society, in government, the private sector and even in  many of the pseudo-organizations of civil society. Their dramatic presence, their predictable forays into the nation’s patrimony and their subsequent arrogant posturings could re-ignite the public’s fading memories of a previous regime’s brutal political repression and tyrannical rule. A better-organized, better-informed and more truly revolutionary consciousness could be facilitated by the resurgence of these people who treated the Philippines as their private looting grounds for more than two decades. Then, like the devil in Goethe’s Faust, they may yet philosophically pronounce when asked for their identity: â€Å"I am he who while ever conspiring to do evil somehow manage to effect good.† The lessons of 1986 and other earlier possible turning points in Philippine history are relatively unambiguous. Revolts do not necessarily make for revolutionary outcomes, at best on for revolutionary potential. In the case of the 1986 Revolution, that potential was aborted. Marcos was deposed as a political ruler, but the political system which spawned him was not irreversibly destroyed and may even now be resurgent. The final lesson of EDSA has long been suspected by democratic sympathizers, although there have been few validations of their thesis. A democratic revolution cannot be initiated or sustained by self-serving elites. Only an enlightened, self-serving citizenry can reliably initiate and sustain an enduring democracy.

Globalization is the global interconnectedness of economic activities. It is characterized by new technologies, new structures, new economies and new cultures. All these are structured around global financial flows that are based of computer simulations and speculations. The resulting global economy is very turbulent due to non-linear feedbacks and it is easily influenced by political events and influential analysts’ projections. These is seen when there is instability in the stock markets in certain countries like the United States of America. The instability affects all other stock markets in the world. But is globalization global? The global economy sees some areas as invaluable and politically irrelevant and often such areas are excluded from this global economy. The idea of globalization was conceived by leading capitalist countries, global financial institutions (World Bank, International Monetary fund (IMF) and World Trade Organization (WTO)) and transnational co-operat ions. The minds behind this idea of globalization thought that this was one way of improving the livelihoods everybody in the globe but as we shall see later on, the models used to come up with globalization had major loop holes. Global information communications and new technologies have played a big role facilitating globalization. This is through the computers, Internet and mobile phones. This has made business transactions easy such that by the click of a button, a lot of money circulates around the globe. New innovations have resulted in increased productivity and competition. These technological advances have lowered the costs of transport and communication. Computers have made it possible to handle large amounts of data in a short time and information storage and retrieval has been made very easy. On a positive note, the new technologies have in one way or another helped in growth of economics  through sharing of ideas. On the other hand, these advances in technology have led to homogenization of cultures. Globalization has increased the profits and productivity of multinational corporations. With free trade rules, some few people, the global elite has become richer and others who are the majority have become poorer. The free trade rules has enabled multinational companies invest their money in emerging economies and removing their money once they speculate that that economy is not doing well. This has wrecked the economies of many countries. Another issue is that this big multinationals have swallowed the small companies leading to losses of jobs. Capra, 2002, in his book ‘hidden connections’ says that most of these multi national companies always try to evade taxes and benefit from subsidies. As a result, their products are cheap and this outcompetes the local companies, which can result in more job losses. But on the other hand, globalization can become a scapegoat for failed national policies. Embezzlement and mismanagement of public resources and corruption deeply rooted in some countries should not be blamed on globalization. In any case, a government should be able to provide the needs of its people. According to the 2002 report on the international forum on globalization, the free trade rules set by the World trade organization consolidate power to a small corporate elite. Globalization has erased political and economic boundaries such that power has shifted from the people and communities to financial speculators, global corporations and leading capitalist countries. As a result, currency markets have made governments unable to control their economic policies because it is this markets that determine the values of national currency. According to Capra 2002, large economies are able to absorb these turbulences but for developing countries, this is a big problem. This financial crisis has led to developing countries to seek for aid and as a result, they have sunk to end less debts. It is important to note that aid is basically a tool for manipulating developing countries. It is important to note that in globalization, capital is global while  labour is local. This means that the globalized capital has the economic power leaving labour disintegrated. Labour itself can be divided into professionals and unskilled workers. Globalization seems to favour the professional laborers while the unskilled laborers can be fired anytime. This has led to social inequality and polarization. Many jobs nowadays are on contract basis and forming labor organizations to bargain for better working conditions is not easy because of fear of loosing jobs. People working in multinational companies operating in their countries fear bargaining for better terms of employment because they fear loosing jobs as the company can move to another country. As a result, people have to put up with poor working conditions and wages. Increased trade as a result of free trade by the World Trade organization has led to increased pollution of the environments. Trade has also resulted to introduction of invasive alien species to new environments. From the ecological perspective, trade, which has increased in the recent past, is the major route in which invasive alien species are introduced to new environments. According to the Convention for Biodiversity, invasive alien species are the major causes for the loss of biodiversity. The environmental impacts are heavily felt in the countries in the south. The free market idea by the World Trade Organization has resulted in constant search for access to natural resources, and this has led to so much pressure on the Earth’s limited natural resources. Another bit is the destruction of the environment, which has led to floods, droughts and other catastrophes. Increased shipping has lead to pollution of waterways. Globalization has also favored monoculture to enhance a nation’s competitiveness in the global market. This has put more pressure on the limited natural resources and use of chemicals to enhance production, which further exacerbates the problem of pollution. Globalization has also penetrated into power and politics. Most of these multinational companies and lobby groups normally finance political candidates in countries of interest  so that if the person gets into power, he/ she may create favorable conditions for their activities. So in a way, these companies and lobby  groups control a country’s economy. Rise of globalized criminal gangs is another problem that stems out of globalization. Boosted by easy communication networks, criminals have found it easy to conduct their businesses. Recently, a drug cartel involving Mexicans, Kenyans and the Dutch was uncovered and this is a classic example of criminal gangs operating on a global scale. WAY OUT. With Food and Agriculture Organization of the United Nations (FAO) press release of 2010 estimating that 925 million around the globe are undernourished, something must be wrong somewhere. As already noted, globalization is to blame social inequalities which can be seen from the widening gap between the rich and the poor. Borrowing from title of the first annual World Social Forum held in Porto Alegre in Brazil, another world is possible. First, change should first start with the ruling elite. With the help of international nongovernmental organizations there should be a power transformation from the global elite to the human society. These global elites together with World Bank, IMF and World Trade Organization should be more transparent in decision-making. In is also very important to include various non-governmental organizations representing interests of social justice, human rights environmental interests and democracy in the decisionmaking processes. Most of the countries affected by globalization are developing countries and most of these countries have very huge debts. It seems impossible for these developing countries to put tight rules on international organizations in order to protect the local companies. But with the help on lobby groups, it is possible for government to remove subsidies and exemptions offered to these multinational corporations. These multinational corporations should also be held responsible for any wrongdoing like destruction of the environment. Cancellation of debts will help developing countries grow economically but these countries too should have leaders who are accountable to the citizens. On that note, corruption and lobbying should be dealt with at every level. This is to ensure fair competition of business deals. It is important to empower workers so that they can bargain for better working conditions. National governments can also protect their people by defining working conditions to investors setting up enterprises in the country. Finally, it is important we practice ecological sustainability. Proper waste disposal, use of alternative fuel sources (scientifically proven to be sustainable), efficient and ecofriendly technologies, sustainable farming practices and strict environmental practices are some of the ways of making the world sustainable. The most important part of sustainability is educating everybody on the importance of conserving the environment so it’s important to take environmental movements deep down to the grass roots. Remember, it starts with me and you and the future generations will be thanking all of us.
